Just cook the soba noodles according to the instructions given in the package, and prepare the seasonings and then serve! A delicious, healthy noodles dish with salmon is ready!

Ingredients for smoked salmon and soba noodle salad from Evoma:

  • 200 gram soba noodles
  • 8 fillets of smoked salmon, sliced
  • ½ cup cucumber slices
  • 1 avocado, pitted and sliced
  • ½ cup baby spinach leaves
  • ½ cup water cress leaves
  • 1tbsp low sodium soya sauce
  • 1 tbsp mirin
  • 1 tbsp rice wine vinegar
  • 1 tsp sesame oil
  • Sliced green onions for garnish
  • Roasted sesame seeds

Directions to prepare smoked salmon and soba noodle salad from Evoma:

  1. To boiling salted water, add the soba noodles and cook till al dante. Drain the water and immerse noodles in ice cold water to stop cooking. Drain again and keep aside.
  2. Prepare the marinade by mixing soya sauce, mirin, rice wine vinegar and sesame oil.
  3. To a serving bowl, arrange the cooked noodles, avocado slices and cucumber pieces. Add the greens and smoked salmon slices. Gently toss the bowl and drizzle the dressing. Garnish with roasted sesame seed and sliced green onions.
